We strive to wash before cooking literally everything, except perhaps for semolina. And we are cruelly mistaken - out of the best of intentions, we risk ourselves a fair amount of harm.
1. Chicken and meat
Many experienced housewives believe that you just need to wash the bird carcass before cooking. In fact, they are mistaken. Bacteria on raw chicken are dangerous for our health. And we have left such a habit since the days of the Soviet Union, when the pasta was of extremely poor quality and without washing it stuck together in one ugly lump.
Another product that, like meat, should not be subjected to water procedures. The reason is the same - microorganisms. Washing does not eliminate bacteria, but only helps them spread over the surfaces of the sink and kitchen table. If the fish has been frozen, then blot off excess moisture with a napkin after defrosting and immediately send the fish to the stove.
In many countries, the shell is treated with a special substance that protects them from the penetration of microorganisms inside. In addition, there is a natural protective "film" on the eggs, invisible to the eye. Therefore, putting eggs in the refrigerator for storage, do not rush to wash them. Water destroys this protective film.
But just before cooking - for God's sake. After all, there is always a risk that a piece of the shell gets into the pan or into the dough. And together with the shell will fall and the film, and particles of dirt remaining on the surface of the egg.
5. Fresh mushrooms
For example, champignons can be briefly brought under a stream of running water, and then immediately dried with a paper towel. This should be done immediately before cooking. Soak them in no case. Mushrooms will quickly absorb moisture and deteriorate, become friable and watery. However, if you are dealing with mushrooms collected by yourself, it makes sense to hold them for a while in the water. If they have worms, they will float to the surface.
Usually it is enough to get rid of the top sheets, but if the head is heavily soiled, then you can substitute cabbage under a small stream of water and immediately wipe dry. Otherwise, the water will dilute too much natural vegetable juice.It turns out that cabbage absorbs water like a sponge.
It's no secret that this is a very tender berry. If you wash it, it will soften and turn into a mush. So if you decide to cook compote from raspberries collected on your site and know for sure that it is not treated with chemicals, then be calm. Moreover, when preparing compote and jam, the berries will undergo heat treatment, and with strong heating, most bacteria die.
