Cannoli - a delicious dessert from Sicily

Italians are experts in the kitchen. And few people can question their culinary skills. Today we are talking about an incredibly delicious dessert called cannoli. Tubules with a delicate cream inside. Just lick your fingers.

In translation from the Italian "cannoli" and means "small tubes". For the first time they were prepared by nuns from Palermo, and they were treated to such a delicacy exclusively by the participants of carnivals. But soon it became so popular and so quickly fell in love with the Italians that they began to cook it all year round.

Especially often they are cooked in Sicily, and must be served at the Christmas table. But this dessert is also well known in America, where it came in the 20th century together with the first immigrants from Italy.

Traditional tubes are made from deep-fried dough and filled with ricotta soft cheese cream, adding chocolate, candied fruits, cherries or pistachios. In order to give a special taste, sometimes alcohol is also used - liquor or wine.

The main secret of the crunch of this delicacy is that they fill cannoli with filling just before serving, so that the dough does not soften. And if this is not possible, then pre-glazed inside with chocolate.

But if you think that the process of cooking can be done only by experienced pastry chefs, then you are mistaken. Cannoli can also be made at home, with a little patience and plenty of time left.

Here is a traditional recipe:

Dough:

  • flour - 300 g;
  • sugar - 40 g;
  • olive oil - 30 ml;
  • egg - 1 pc .;
  • white wine - 120 ml;
  • cinnamon;
  • salt.

Cream:

  • ricotta - 400 g;
  • icing sugar - 50 g;
  • liquor - 50 ml;
  • candied fruit.

First you need to cook the dough on the tubes. To do this, mix the flour with egg, sugar, salt and cinnamon. Stir well, pour in the wine. The resulting semi-finished product should be cooled in the refrigerator for half an hour. After rolling out, cut out the circles and wrap them around special cone-shaped baits. If there are none, then you can make them with your own hands from thick cardboard, turning it into a cone and securing it with clips.

Fry the billet in a deep-fried or deep-frying pan with a lot of oil.

When the tubes are ready to let them cool down, and prepare the filling. For it, you just need to combine soft cheese with powder, liqueur and candied fruits, and then fill the blanks.
