How to cook a healthy soup of nettle

You will need
  • - 300 g nettle;
  • - 100 g leek or common green onions;
  • - 30 g butter;
  • - salt (to taste);
  • - sour cream (to taste);
  • - pepper (to taste);
  • - 3 potatoes;
  • - 100 g of celery root;
  • - 15 g flour;
  • - 1 PC. carrots;
  • - 1 egg;
  • - Spices (to taste);
  • - 1.5 liters of water.
Instruction
Boil 1.5 liters of water. Nettle thoroughly rinse and scald with boiling water. Peel the vegetables, potatoes and carrots into slices and dice the leeks and celery root into cubes. Finely chop the nettles and dip into a pot of boiling water. Add salt and spices to taste.
Fry the carrots and leeks in sunflower oil. Add the prepared mixture to the pan. Add chopped potatoes and celery root, cook for 5–9 minutes. Stir in the soup. Cook over medium heat.
Melt the butter in a pan, fry the flour to a golden color, stir constantly, then add 2 tablespoons of water from the saucepan with the soup. Pour the resulting mixture into the pan.Cook for another 7–10 minutes on high heat. Remove from heat, let the soup cool slightly. Pour the soup into a plate, add half the eggs, sour cream and pepper to taste.
